Take a culinary lesson from the Athenians and you may lower your risk of rheumatoid arthritis (RA), a chronic inflammatory joint disease. Researchers studied the eating habits of Greek women to see how diet might affect RA risk. Their findings? Healthy women who consumed the most olive oil were 62 percent less likely to develop RA and those with the highest intake of cooked vegetables had a 75 percent lower risk of developing the disease. Researchers believe that the vitamin E in olive oil may have a protective effect and that heating vegetables helps the body absorb important nutrients.
